I’m not a big fan of the Dutch potato, well only when they are baked with loads of mayonnaise. Thankfully there is the healthier option of the sweet potatoes, which I DO love! So this recipe from Chickslovefood

It’s very easy to make! Clean the potato and wrap it tight in foil. Heat the oven to 180 degrees and bake the potatoes for about 1 hour . Not sure if it’s done? Just stick a fork in it, if that goes easy without resistance, its ready.
While you wait for the potatoes you quickly bake the garlic. Add the chorizo and continue baking until it’s nice and crispy. Grate the courgette and add the warm chorizo. Mix it with the cheese and your filling is done.
When the potatoes are done, you take them out of the oven and cut them in two. Scoop some of the flesh out of the potatoes to make space for the filling. Don’t throw this away, just mix it with the rest of the ingredients! Stuff the filling in the potatoes, sprinkle some cheese over it and place back in the oven for about 15 minutes.
The potato itself is enough for an evening meal but a nice fresh salad on the side makes it even nicer. Enjoy!
